This warm air-fried peach cherry pecan bowl is a naturally sweet fruit-based dessert made with fresh peaches, dark cherries, pecans, Ceylon cinnamon, honey, lemon juice, and vanilla bean paste. It is simple, comforting, and made entirely from whole-food ingredients with no refined sugar and no artificial anything. This is also the second recipe on the site, and honestly it might be the one I'm most proud of so far.

Some nights you just want something warm and sweet that doesn't make you feel like you undid everything. That's where this bowl came from. I had peaches that needed to be used, a bag of dark cherries in the fridge, and pecans on the counter. Threw it all in the air fryer and didn't expect much. It came out caramelized at the edges, the cherries got a little jammy, and the pecans toasted up perfectly. I've made it probably six times since then. The Ceylon cinnamon matters here, it's softer than regular cinnamon and doesn't overpower the fruit. A small pinch of Himalayan salt in there brings everything together. I usually eat it on its own but my favorite way is over plain Greek yogurt after a workout. The fruit is sweet enough that you don't need much else.

    Add the cinnamon, coconut palm sugar, honey, vanilla bean paste, sea salt, and lemon juice.

    Toss everything together until the fruit and pecans are evenly coated.

    Transfer to the air fryer basket in a single layer.

    Air fry at 350°F for 8-12 minutes, stirring halfway through, until the fruit is soft and caramelized at the edges.

Yes. Thaw them first and pat them dry so they don't release too much liquid in the air fryer. Fresh will always caramelize better but frozen works when they're out of season.
What's the difference between Ceylon cinnamon and regular cinnamon?+
Ceylon is sometimes called true cinnamon. It has a lighter, slightly sweeter flavor and lower levels of coumarin compared to the cassia cinnamon you usually find at the store. For something like this where cinnamon is a main flavor, Ceylon makes a real difference.
Can I skip the coconut sugar?+
If your peaches are really ripe and sweet, you can skip it. The honey does most of the sweetening. The coconut sugar just adds a little depth and helps with the caramelization.
What can I serve this over?+
Plain Greek yogurt is my go-to, especially after a workout. It also works over oatmeal, protein pancakes, or just on its own. If you want something lighter, it's great with a scoop of cottage cheese too.
How do I keep the pecans from burning?+
Stir halfway through and keep an eye on it after the 8-minute mark. Every air fryer runs a little differently. If yours runs hot, start checking at 7 minutes.
