Whole golden pompano stuffed with garlic, parsley, cilantro, lemon and lime, then smoked on the grill until the skin crisps and the flesh turns buttery and flaky. Served alongside pecan and shallot green beans, lemon ginger asparagus, and cinnamon spiced Japanese sweet potatoes. Tomotillos and Mini eggplants are seasoned with salt, pepper, onion powder and garlic powder and drizzled with olive oil and coconut oil. The mushrooms are seasoned with coconut aminos, smoke paprika, garlic powder, onion powder, fresh ground black pepper and sea salt. A full week of meal prep done in one grill session.

Summertime hits and the grill starts calling my name. That is when I know it is time to stop cooking one thing at a time and just put everything out there and get my whole week done at once. That is exactly what this cook was. One grill session, multiple trays, and done. I used golden pompano for the fish because it is one of my favorites. It is a very buttery, light, flaky fish and it does not need much. I seasoned the outside and the inside cavity with sea salt, fresh ground pepper, and fresh squeezed lemon and lime juice. Then I stuffed the cavity with fresh chopped garlic, parsley, cilantro, shallots, and slices of lemon and lime. The grill does the rest. The most important thing I will tell you about this fish is do not overcook it. Golden pompano cooks fast and when it is done, it is done. Pull it at the right time and you will have something really special. The green beans have pecans, fresh grated garlic, lemon zest, parsley, cilantro, and a drizzle of olive oil and coconut oil. The asparagus has fresh grated ginger, lemon, shallots, and spices. The Japanese sweet potatoes has cinnamon, cayenne, coconut sugar, and ginger. Everything went on together. That is meal prep.

  • 1 lb fresh green beans, trimmed
  • 1 tbsp olive oil, for green beans
  • 1 tbsp coconut oil, melted, for green beans

  • 1 tbsp fresh lemon juice, for green beans
  • 1/3 cup raw pecans, roughly chopped

Instructions

    Preheat your grill or smoker to 375 to 400 degrees F. If using a smoker, add your wood chips now.

    Pat both fish dry. Score each side of the fish 3 times with a sharp knife, cutting about halfway through the flesh. Season the outside and inside cavity generously with sea salt and fresh ground pepper. Squeeze fresh lemon and lime juice over both fish and into the cavities.

    Stuff each fish cavity with the chopped garlic, parsley, cilantro, sliced shallots, and 2 to 3 lemon and lime slices. Place fish in a foil-lined pan or directly on the grill grates over indirect heat.

    In a large bowl, toss the trimmed green beans with olive oil, melted coconut oil, grated garlic, lemon zest, lemon juice, sea salt, and pepper until fully coated. Transfer to a foil pan. Top with chopped pecans, parsley, and cilantro. Set aside.

    In a separate bowl, toss the asparagus with olive oil, grated ginger, lemon zest, lemon juice, sliced shallots, onion powder, garlic powder, sea salt, and pepper. Arrange in one half of a large foil pan.

    In the same bowl, toss the diced Japanese sweet potatoes with olive oil, melted coconut oil, cinnamon, coconut sugar, cayenne, grated ginger, sea salt, and pepper. Place them in the other half of the foil pan with the asparagus.

    Place the fish on the lower grill grate. Place the sweet potato and asparagus pan and the green bean pan on the upper rack. Place the halved mini eggplants and tomatillos directly on the upper grate if using.

    Grill the fish for 20 to 25 minutes total, flipping once at the halfway point, until the skin is charred and the flesh flakes easily with a fork. Do not overcook. Golden pompano is done faster than you think.

    The sweet potatoes and asparagus will take 25 to 35 minutes. The green beans will take about 20 to 25 minutes. Stir the vegetables once midway through. The eggplant and tomatillos will take 20 to 30 minutes depending on size.

    Pull everything off the grill once cooked through. Let the fish rest 5 minutes before serving. Portion everything into meal prep containers or serve family style.

How do I know when the golden pompano is done on the grill?+
The flesh will be opaque and it will flake easily when you press it gently. Golden pompano is a thin, buttery fish so it cooks faster than you think. I would rather check it early than let it go too long. Do not overcook it.
Can I use a different fish if I cannot find golden pompano?+
You can. Sea bream, branzino, or red snapper would all work with this same stuffing and seasoning approach. Just keep in mind pompano is extra buttery and light so the texture will be a little different with another fish.
Can I cook all of this without a smoker grill?+
Yes. A regular grill works fine. If you want that smoke flavor, add a small foil packet of wood chips to one side of your gas grill or toss chips directly on charcoal. The vegetables can also go in a regular oven at 400 degrees if needed.
How do I store the leftovers for meal prep?+
