Salad is not a side dish in my kitchen. It is the main star. That is how I have always felt about it, and this roasted beet salad is exactly what I mean. I do not use salad dressing. Never have been big on it. Instead, I build the flavor into every single ingredient I put in the bowl. Roasted red and golden beets, fresh pineapple, green apple, kiwi, sliced strawberries, diced cucumber, red onion, fresh parsley and cilantro, chopped pecans, shredded coconut, sea salt, fresh cracked black pepper, and a drizzle of olive oil and balsamic vinegar. That is it. Every bite has something going on because every ingredient is pulling its weight. The sweetness from the fruit, the earthiness from the beets, the crunch from the pecans, the bright punch from the herbs. Nothing is there just to fill space. On occasion I will crumble some blueberry or cranberry goat cheese on top and that gives it a really nice creamy twist. But honestly, it is great either way. My salads are usually a little of everything and a lot on flavor, and this one is no different.

Ingredients

  • 2 medium red beets, peeled and roasted, sliced into wedges
  • 2 medium golden beets, peeled and roasted, sliced into wedges
  • 1 tablespoon olive oil, for roasting beets
  • 2 cups mixed greens
  • 1 cup arugula
  • 1 cup baby spinach
  • 1 cup fresh pineapple, diced
  • 1 medium green apple, diced
  • 2 medium kiwi, peeled and sliced
  • 6 fresh strawberries, sliced
  • 1 small red onion, thinly sliced
  • 1 medium cucumber, diced
  • 0.25 cup fresh parsley, roughly chopped
  • 0.25 cup fresh cilantro, roughly chopped
  • 0.5 cup raw pecans, roughly chopped
  • 2 tablespoons unsweetened shredded coconut
  • 2 tablespoons olive oil, for dressing, drizzled over salad
  • 2 tablespoons balsamic vinegar
  • sea salt, to taste
  • fresh ground black pepper, to taste
  • 2 ounces blueberry or cranberry goat cheese, optional, crumbled on top

Instructions

    Preheat the oven to 400 degrees F. Peel the red and golden beets and cut them into wedges or large chunks. Toss with 1 tablespoon olive oil, a pinch of sea salt, and black pepper. Place in a single layer in a baking dish.

    Roast the beets for 45 to 50 minutes, turning once halfway through, until fork tender and slightly caramelized at the edges. Remove from the oven and let them cool for at least 10 minutes.

    While the beets cool, prepare the remaining ingredients. Dice the pineapple and green apple into bite-size pieces. Peel and slice the kiwi. Slice the strawberries. Thinly slice the red onion. Dice the cucumber. Roughly chop the parsley and cilantro.

    In a large salad bowl, combine the mixed greens, arugula, and baby spinach. Toss gently to mix the bases together.

    Add the diced pineapple, green apple, kiwi, strawberries, red onion, cucumber, parsley, and cilantro over the greens.

    Arrange the roasted beet wedges on top of the salad.

    Scatter the chopped pecans and shredded coconut evenly over the salad.

    Drizzle 2 tablespoons of olive oil and 2 tablespoons of balsamic vinegar over everything. Season with sea salt and fresh ground black pepper to taste.

    If using goat cheese, crumble 1 to 2 ounces of blueberry or cranberry goat cheese over the top just before serving.

Do you really not use any salad dressing?+
Really, no dressing. The olive oil and balsamic vinegar are the only liquids I use, and those are more of a light drizzle than a dressing. All the flavor comes from the ingredients themselves. The fruit brings sweetness, the balsamic brings a little acidity, and the fresh herbs tie everything together.
What kind of beets work best for this salad?+
I used both red and golden beets here. The golden ones are a little milder and sweet, and the red ones are earthier. Roasting both together gives you two different flavors in one salad. Either works on its own if you can only find one type.
You mentioned goat cheese on occasion. What kind do you use?+
I like blueberry goat cheese or cranberry goat cheese. Both crumble easily over the top and give it a creamy bite that works really well against the roasted beets and the fruit. It is not an everyday thing for me but when I add it, it is a nice twist.
Can I roast the beets ahead of time?+
Yes, absolutely. I usually roast them a day or two ahead and keep them in the fridge. When I am ready to build the salad I just pull them out and slice them up. It makes putting the whole thing together really fast on the day you want to eat it.
